This special occasion started back before Christmas when I was trying to decide what to get my parents. They never seems to really need anything so it is always hard to come up with gift ideas. The creative side in me always has to come up with something fun! So this year, one of their gifts included a gift card to a “Fancy Dinner” at our house. I made a cute little gift card that they had to present to use (:
So dad called and said he wanted to use it when they came out this past weekend. I asked what he wanted to eat. Olive Garden is one of our favorite restaurants and our favorite item was Lasagna Rollata Al Forno. Recently Olive Garden took it off the menu…*Tear*. So what does dad ask for? Lasagna Rollata Al Forno of course! So I got busy looking up different recipes that may be similar to this delicious meal. I found one and decided to try it. I tried to theme the rest of the meal around what may be served at Olive Garden. I came up with Mozzarella Sticks for the appetizer (dads favorite), a salad, breadsticks, and Turtle Cheesecake as dessert. It all turned out very yummy, except I am no expert at making food look pretty. I can make it taste good, but it is NEVER pretty. I just don’t have that talent. So I broke out my Ruffled table cloth, some candles, my nice plates, and some wine! Of course it is no Olive Garden atmosphere with beautiful food and awesome presentation, but hey, its the thought that counts right? Everyone really enjoyed the food so it went good! Lasagna Rollata Al Forno
Five Cheese Marinara Sauce:
2 cups marinara sauce
2 cups alfredo sauce
1/2 cup ricotta cheese
1 cup italian blend shredded cheese
1/4 cup red wine
15 ounces ricotta cheese
8 ounces mozzarella cheese
1/2 cup parmesan cheese
1 cup three cheese blend-
(parm cheese, asiago cheese, & romano cheese-can be found by parm cheese)
1 tablespoon italian seasoning
1 lb lasagna nooodles
Blend first two marinara ingredients together in large saucepan. Add remaning ingredients and heat on medium heat stirring frequently. After cheese is melted and sauce is creamy, turn to low and just keep warm while preparing other ingredients.
Set aside 1/4 of mozarella cheese. Beat egg and add all remaining ingredients. Keep refrigerated until ready to use.
Cook lasagna according to package directions. Drain and rinse in cold water.
When everything is ready spread marinara sauce in 9×13 dish to just cover bottom. Lay noodles out and spread filling evenly onto noodles. Roll noodle up jelly-roll style. Continue with each noodle until all noodles are arranged in dish. Cover each roll with remaining sauce and top with mozzarella cheese.
Bake at 350 degrees for 35 minutes.
1 8×8 brownie mix package
1 14 ounce package caramels
1/4 cup evaporated milk or plain milk
1 cup chopped pecans
2 8 ounce cream cheese
1/2 cup sugar
Mix brownies according to box and place in greased spring form pan. Bake at 350 for 18-20 min. Take out of oven and let brownies cool. Melt caramels and evaporated milk in microwave, stiring frequently. Pour caramel mixture over brownies without touching sides. Sprinkle pecans over caramel. Beat cream cheese, sugar, and eggs. Mix until blended and then pour over other layers. Bake at 350 for 35-45 min. Let cool 10 min and then run knife around edge. Refrigerate 4 hours or overnight. Drizzle top with fudge and pecans before serving.
